Sometimes a great fish gets out of its own way. Grouper is firm, sweet, and mild; it doesn’t need much more than lemon juice, cracked pepper, and a blast of heat from the broiler to shine. Four to six minutes under the flame, and dinner is done.

The only real technique here is not overcooking. Grouper is a lean, dense fillet that goes from perfectly flaky to dry and bouncy fast. Check for doneness with a fork at 4 minutes; if it flakes cleanly, pull it. Waiting until it looks fully cooked usually means it already is overcooked.

Broil 4 inches from the heat (not closer) so the top colors lightly without scorching while the inside cooks through. A cold pan and a non-stick spray keeps the bottom from sticking, since you’re cooking the fillet without flipping.

Pro Tips

  • Pat the fish bone-dry before seasoning. Surface moisture steams under the broiler and prevents any light browning.
  • Use fresh-squeezed lemon juice, not bottled. The aromatic oils in fresh lemon make a real difference on a dish this simple.
  • Add a pinch of flaky sea salt along with the pepper for a cleaner, brighter finish than table salt.
  • Pair with a pan sauce of butter, capers, and parsley; or a fresh mango salsa if you want a tropical angle.

Variations

  • Dust lightly with Old Bay, Cajun seasoning, or za’atar before broiling for an easy flavor variation.
  • Swap grouper for snapper, halibut, or firm cod. The technique works identically.
  • Drizzle with chimichurri or a compound herb butter after broiling for a restaurant-style plate.

Directions

Thaw fish if frozen.

Cut into serving-size pieces. Sprinkle fish fillets with lemon juice and pepper. Spray unheated rack of broiler pan with non-stick coating. Place fish on rack. Broil 4 inches from heat for 4 to 6 minutes or until fish flakes easily when tested with fork. Serve with sauce.
