My Aunt makes these every year for Christmas and we look forward to them every year. Addictive and absolutely delicious and only 4 ingredients!

The rich, velvety chocolate coating gives way to a soft, pillowy marshmallow center, all perfectly complemented by the smooth cream cheese and the delightful crunch of shredded coconut.

Directions

Melt the chocolate chips over a bain marie (double-boiler).

Remove from the heat and stir in the cream cheese, maraschino cherries and marshmallows.

Shape into balls and roll in coconut then drop onto waxed paper.

Keep refrigerated until ready to serve.

what amount of cherries

8 oz. of candied mixed cherries or fruit. In Canada we call them Cherries Glacé or Glace Mix.

We use the cream cheese half chocolate and half butterscotch chips, colored mini marshmallows, cherries and walnuts melted and mixed then Quickly rolled in dessicated coconut with the help of two spoons. Serve and store chilled.

Cream balls very soft even in freezer overnight?

My best guess is the cream cheeses to chocolate chip ratio is off. You could try salvaging what you made by melting some more chips and mixing it in - the coconut will wind up mixed in, but it may fix it…? Or, too much liquid went in with the cherries. Either way, best guess at fixing is more melted chips.
