Health and nutrition news that’s easy to digest

A blue pumpkin, generally only found at Fall Farmers Markets

The rich colors of autumn are captured in the gorgeous produce that is available at fall farmers markets across the country. Delicious fruits and vegetables such as pumpkins, squash, apples, pears, plums, corn and sweet potatoes are coming into season.

They are being harvested by local growers in most regions. Locally grown produce, cultivated by farmers in your area, is more nutritious and flavorful than produce that is shipped to the grocery store.

Squash and sweet potatoes are an excellent source of vitamins A and C, potassium, and manganese. Fall fruits like apples, pears and plums are high in dietary fiber and vitamin C. The many varieties of corn that are coming into season are a good way to add thiamine and folate into your diet.

Many of your favorite varieties of squash like pumpkins, butternut squash, acorn squash and spaghetti squash are available throughout the season.

Also look for unique produce like blue pumpkins (see photo), with their mild sweet flavor and thick orange flesh, to use in your favorite fall recipes!

The colorful crops being harvested locally this autumn can be incorporated into many classic recipes like Cranberry Stuffed Acorn Squash and Holiday Roasted Vegetables.

Add the mouthwatering fruits of fall into delicious desserts like Apple Spice Cake, Deep Plum Pie, and Pear Almond Tart.

Try using your farmers market finds in savory recipes like Mushroom Butternut Squash Lasagne, Spaghetti Squash and Chicken Skillet Casserole or whip up a yum-o Cheesy Spaghetti Squash Gratin with Fresh Basil.

Be inspired to try new recipes this season with the wide variety of locally grown produce that is available through the fall farmers market!
