60 minGliko tapsiou me ladi, the Greek oil cake, is a clever piece of Mediterranean baking that comes from the Lenten tradition: no eggs, no butter, no dairy whatsoever. The structure comes entirely from oil and orange juice, which means it’s naturally vegan and surprisingly tender.
The spice profile is pure Greek pastry: warm cinnamon and ground cloves married to citrus juice, with brandy added to dissolve the baking soda (a traditional trick that also adds aromatic depth). Chopped walnuts and raisins fold into the batter for texture, and a generous shower of sesame seeds on top crisps in the oven into a nutty, golden crust.
Pro Tips
- Use a good quality vegetable or extra-virgin olive oil. The oil is the dominant flavor, so a flavorless oil produces a flavorless cake.
- Dissolve the baking soda fully in the brandy before adding. Undissolved soda leaves bitter pockets in the finished crumb.
- Mix the flour in gradually while stirring constantly. Dumping it in all at once leads to lumpy batter and uneven rise.
- Sprinkle sesame seeds generously, they’re traditional and they crisp into the cake’s signature crust during baking.
Variations
- Add 1 tablespoon of grated orange zest to the batter for a brighter, more pronounced citrus note.
- Swap walnuts for chopped almonds and add a teaspoon of ground mahleb for a deeper Greek-bakery flavor.
- Drizzle the cooled cake with a thin honey-water syrup for a more dessert-leaning version, similar to ravani.

Directions
*[NOTE: Original recipe calls for “1½ glasses of oil and 1½ glasses of orange juice". No mention of what size glass, as is typical of Greek cookbooks.]
Combine the oil, the orange juice and sugar.
Dissolve the soda with the brandy and add it to the mixture also; add the cinnamon and the ground cloves.
Then very gradually add the flour, stirring constantly.
Finally, combine the walnuts and the raisins with the mixture.
Coat a medium-sized baking tin to spread the mixture evenly.
Sprinkle with sesame seeds and bake for 40 to 50 minutes.
Cut to serve into oblong pieces.
