A scrumptious sweet potato casserole that gets a unique and delicious taste from the chopped pecans it uses.

Ingredients

3 cups potatoes sweet, cooked, mashed
1/2 cup sugar
2 large eggs
1/4 cup butter softened
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup margarine
1/2 cup sugar brown
1/4 cup flour, all-purpose
1/2 cup pecans chopped

Directions

Mix first 6 ingredients together. Put in a 2 quart casserole. Melt butter or margarine in small saucepan, add brown sugar, flour and nuts. Stir well & sprinkle on top of potatoes. Bake uncovered 30 minutes in 350 degree oven.

You may add 1/2 ts each of cinnamon and nutmeg to first 6 ingredients. Hot or cold you will think you are eating dessert. Delicious!
