| 1 | cup | pasta, rotini | or other small pasta |
| 15 | ounces | white beans | drained, rinsed well, and drained again |
| 2 | each | sweet red bell peppers, roasted | diced |
| 1/4 | cup | mayonnaise, light | |
| 3 | tablespoons | pesto, prepared | sun-dried tomato or basil |
| 1 1/2 | tablespoons | white wine vinegar | or lemon juice |
| 1/8 | teaspoon | salt | |
| 1 | x | black pepper | freshly ground |
| 1/4 | cup | parsley leaves | minced, optional |
1. Bring a pan of water to the boil, add the pasta and cook Drain.
2. Combine the pasta with the beans and bell peppers.
3. Combine the mayonnaise, pesto, vinegar or lemon juice, salt Stir into the salad.
Stir in the parsley if using and serve.
Note: Roasted red bell peppers can be purchased already prepared; major supermarkets often stock them with other condiments.
