1 hrsThis chicken casserole is peak retro comfort food, and it earns every bit of its name. Boneless chicken breasts get layered with Swiss cheese, sliced mushrooms, and a creamy wine sauce, then buried under a crunchy stuffing topping. It looks and tastes fancy, but it goes from counter to oven in 15 minutes.
The sauce is just cream of chicken soup thinned with white wine. Sounds humble, but the wine cuts the richness of the condensed soup and adds a subtle acidity that keeps the whole dish from feeling heavy. As it bakes, the sauce bubbles up through the stuffing and the cheese melts down into the chicken, creating layers of flavor in every forkful.
The stuffing topping is where the texture magic happens. Drizzled with melted butter and baked until golden, it turns into a crispy, savory crust on top while the chicken stays moist and saucy underneath.
Pro Tips
- Pound the chicken breasts to even thickness so they cook at the same rate. A thin end dries out while a thick center is still raw.
- Use a dry white wine like Sauvignon Blanc or Pinot Grigio. Sweet wines make the sauce cloying.
- Layer the Swiss cheese directly on the chicken before adding the soup mixture. It forms a barrier that keeps the chicken from getting soggy.
- Don’t pack the stuffing down. Keep it loose and it’ll crisp better in the oven.
Variations
- Mushroom lovers: Use cream of mushroom soup instead of chicken, and double the mushrooms for a more earthy, fungi-forward version.
- Broccoli Swiss: Tuck blanched broccoli florets between the chicken and cheese for a complete one-dish dinner.
