| 1/2 | package | tofu | soft |
| 1 | cup | pesto, prepared | |
| 1 | each | pie shell (9 inch) | vegan |
| 1 | cup | mushrooms | sliced |
| 1/4 | cup | tomatoes | fresh, chopped, optional |
Process the tofu and pesto in a food preocessor until smooth.
Set the pie crust in a pie plate and arrange the mushrooms and tomatoes on the bottom.
Pour in the tofu-Pesto mixture.
Bake in a preheated 375 degree oven for 35 to 45 minutes.

They are nice cookies, but I think two points have to be made. Firstly, the recipe as posted forgets to tell you when to add chocolate chips! I added them after mixing the dough and it turned out ok. Also, I only got 7 Cookies out of it. Mine were large, so you could probably get 10, but you should double or triple this recipe to get a large batch of cookies.
