At a recent party everyone gobbled up this satisfying pasta salad loaded with marinated artichokes, sun-dried tomatoes, roasted pepper and tortellini. Literally packed with flavor.

This Cajun blackened chicken caesar salad was absolutely delicious. The chicken was super moist and packed with flavor. We used lettuce for the salad, and it was tasty and refreshing, perfectly balanced with chicken. Serve it with a few slices of bread, or some croutons to make a complete meal.

So easy to make, and the dish came out super tasty. Instead of green bell pepper, I used sweet red bell peppers, didn't have mint, so used fresh basil leaves instead. Yum.

Love this salad. We jut had some leftover wild rice, and we didn't have sweet bell pepper, so used the picked hot cherry pepper instead, also added some sliced celery and smoked tofu. It came out delicious. A very good side dish or can be a wholesome and tasty main dish as well.
