Ingredients

1 pound beef, sirloin steak sliced into 1/8 inch slices, or top
1 tablespoon vegetable oil
1/2 cup scallions, spring or green onions sliced
1 package rice long grain and wild
7 ounces corn, canned, whole kernels drained
16 ounces tomatoes, stewed, canned undrained

Directions

Brown beef in oil in large skillet over medium-high heat.

Add onions; cook 1 minute longer.

Add rice, corn, and tomatoes. Cook until thoroughly heated, about 2 to 3 minutes.
