15 minThis is not your grandma’s cobbler. It’s a raw, no-bake, all-fruit layered dessert that lets ripe summer peaches and black raspberries do all the heavy lifting.
A coconut base gets topped with a creamy filling made from pureed soaked peaches, mashed bananas, and shredded coconut. Fresh peach slices go on next, then the whole thing gets blanketed in a vibrant berry-date sauce brightened with lemon zest.
No oven, no refined sugar, no dairy. Just fruit, coconut, and dates doing what they do best. It’s naturally vegan and comes together in about 15 minutes of active work.
Kitchen Tips
- Use ripe, fragrant peaches. If they don’t smell like peaches at the store, they won’t taste like much in the cobbler either.
- Soak the dried peaches and dates for the full hour. They need to soften completely for a smooth puree.
- Serve immediately for the best texture. The banana filling softens over time.
- Chill for 30 minutes if you prefer a firmer, more sliceable dessert.
Variations
- Swap black raspberries for strawberries. Slice the ones you don’t blend for extra texture.
- Use mangoes instead of peaches for a tropical twist.
- Top with a sprinkle of raw cacao nibs or chopped macadamia nuts for crunch.

Directions
CRUST: Sprinkle coconut evenly over the bottom of a 9 inch X 12 inch pan.
FILLING: Drain the soaked fruit, reserving the water.
Purée the soaked peaches in a food processor or a blender, adding a little soak water as necessary.
Pour into a large bowl. Mash in the bananas and coconut with a fork.
Spread this over the crust. Slice the fresh peaches and scatter over the top.
Blend 1½ cup berries with dates and lemon peel in a food processor or blender until smooth.
Mix in the remaining berries.
Pour over the top of the pie and spread evenly.
Serve immediately.
VARIATION: Substitute black raspberries with strawberries and slice those that are not blended before mixing in.
