Ingredients

1 teaspoon olive oil
1/2 cup onion finely chopped
1/4 cup celery finely chopped
1 1/2 cup tomatoes plum, seeded, diced
1 1/2 teaspoon tarragon fresh, chopped
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon lemon juice fresh

Directions

Heat oil in a large nonstick skillet over high heat. Add onion and celery; sauté 1 minute. Add tomato; sauté 1 1/2 minutes or until tender. Remove from heat; stir in tarragon and remaining ingredients. Serve over halibut or cod.

Yield 1 1/4 cups.

Herbed Breadsticks
