45 minEasy tamale pie is the casserole that put boxed corn muffin mix on the weeknight dinner map. Browned ground beef gets seasoned with chili packet and tomato sauce, topped with a quick cornbread batter, and baked until the cornbread caps the dish like a golden lid. Cheddar goes on hot from the oven so it melts down through the cracks.
Evaporated milk in the cornbread topping is the small move that matters. The concentrated dairy gives the cornbread a richer, almost-custard texture without watering down the corn flavor the way regular milk would.
Drain the beef well after browning. Pooled fat under the cornbread topping turns it greasy and prevents proper baking on the bottom of the cap.
Kitchen Tips
- Use 80/20 ground beef for flavor. Leaner meat dries out under the cornbread topping.
- Spread the cornbread batter evenly to the edges so it seals the filling and steams it from above
- Sprinkle the cheese on while the casserole is still hot. Residual heat melts it cleanly.

Ingredients
Directions
Brown ground beef, drain grease.
Add onion, celery and green peppers.
Sauté until tender.
Mix in tomato sauce and chili seasoning. Mix well.
Pour into greased casserole dish.
Mix milk and corn muffin mix together.
Pour over top of meat mixture.
Bake at 375℉ (190℃) F for 20 to 25 minutes.
After removing from oven sprinkle with cheddar cheese and let it melt.
