1 hrsCut the fat without cutting the flavor in this lightened-up Spam quiche.
Egg whites replace whole eggs, skim milk stands in for whole, and low-fat Monterey Jack keeps it cheesy without the guilt.
It still bakes up puffy and golden and satisfying, proving you can have your comfort food and eat it too when you’re watching calories.
Chef Tips
- Use 8 egg whites instead of 4 whole eggs to slash cholesterol significantly
- Low-fat Bisquick mix keeps the batter light while maintaining structure
- Don’t skip the resting time after baking or the center will be too soft to slice
- Pair with a green salad for a complete low-fat meal under 250 calories per serving
