Lighter crustless Spam quiche made with egg whites, skim milk, and low-fat cheese for healthier comfort. All the flavor with less fat in 40 minutes.

Cut the fat without cutting the flavor in this lightened-up Spam quiche.

Egg whites replace whole eggs, skim milk stands in for whole, and low-fat Monterey Jack keeps it cheesy without the guilt.

It still bakes up puffy and golden and satisfying, proving you can have your comfort food and eat it too when you’re watching calories.

Directions

Preheat oven to 400℉ (200℃).

Prepare a 8 inch square pan with cooking spray.

In a small bowl, combine luncheon meat, onions, and bell peppers.

Spoon into prepared pan.

Sprinkle with cheese. In a mixing bowl, combine baking mix, milk, egg whites, and black pepper.

Mix well. Pour evenly over cheese in pan.

Bake for 40 minutes, or until lightly browned.

Let stand five minutes before serving.
