1 hrsThis is the kind of casserole your grandma would have made if she had a can of Spam and a hunger that wouldn’t quit.
Cream of mushroom soup, melted cheese spread, cheddar, and milk create a velvety sauce that binds together cubed Spam, mixed vegetables, and minute rice into one glorious pan of comfort.
French fried onions add crunch in the middle while a buttered cracker topping gets beautifully golden and crisp during the bake.
It feeds a crowd of 8 with just 10 minutes of hands-on prep, making it a lifesaver on busy weeknights.
Chef Tips
- Swap in frozen broccoli or peas for the mixed vegetables if that’s what you have on hand.
- Don’t skip the buttered cracker topping. It adds a salty crunch that makes this casserole sing.
- Let it rest for 10 minutes out of the oven so the sauce thickens and the servings hold together on the plate.
