Sour cream burgers stay juicy because the sour cream goes right into the beef, along with green onion and a little crumb to keep them tender. Cook them fast in the microwave or sear them on the grill, then load up the buns.

The secret to these burgers lives in the mix, not the toppings. Stirring sour cream straight into the ground beef, along with green onion and a spoonful of bread crumbs, keeps even lean meat moist and tender as it cooks.

That bit of dairy and crumb does the work of fat, so the patties don’t dry out and turn hockey-puck firm.

You’ve got two cooking routes. The microwave method is genuinely fast and handy when you don’t want to fire up the grill, turning out a couple of patties in a few minutes start to finish. Or take them to the grill for a few minutes a side and pick up that smoky char.

Either way, toast the buns. A sturdy toasted bun stands up to the juices instead of going soggy.

Pile on lettuce, tomato, pickles, cheese, and red onion, then finish with an extra dollop of sour cream up top.

Kitchen Tips

  • Fold the sour cream and crumbs in gently and don’t overwork the beef, or the burgers turn dense.
  • Press a shallow dimple into the center of each patty so it cooks flat instead of bulging into a dome.
  • If you microwave them, drain the fat and rotate the dish halfway through for even cooking.

Variations

  • Stir a spoonful of prepared horseradish or a dash of hot sauce into the mix for a tangy kick.
  • Melt sharp cheddar or pepper jack on top and add a smear of garlic aioli.

Directions

Stir together ¼ cup Sour Cream, green onion, bread crumbs, salt and freshly ground pepper.

Add the ground beef, mix well. Shape into two ¾ inch thick patties.

Place patties in a small baking dish .

Loosely cover with clear plastic wrap or waxed paper.

Micro-cook on 100% power for 3 minutes.

Turn patties over, rotate the baking dish a half turn.

Micro-cook, loosely covered, on 100% power for 2 to 3 minutes more or until meat is done.

Drain off fat. Serve the patties on toasted buns with toppings as your choice.

Dollop with additional sour cream, if desired.

Or grill the patties for 3 to 5 minutes on each side until it’s cooked through.
