130 minSnickers ice cream is a no-churn freezer dessert that mimics the candy bar with four pantry-friendly ingredients. Vanilla ice cream gets softened and folded with crunchy peanut butter, instant chocolate pudding mix, and whipped cream, then refrozen until firm. The pudding mix is the secret: it adds chocolate flavor without watering down the texture and helps the ice cream stay scoopable straight from the freezer.
Let the vanilla ice cream sit on the counter for 10 to 15 minutes before mixing. You want it soft enough to fold gently, not melted. Soupy ice cream loses its air and refreezes hard as a brick.
Fold, don’t beat. A rubber spatula and a gentle hand keep the whipped cream airy. Stirring it hard collapses the volume and you’ll lose the creamy texture you’re trying to build.
Use crunchy peanut butter, not smooth. The texture mimics the chopped peanuts in an actual Snickers, and you get those satisfying little crunchy bites scattered through the scoop.
Freeze for at least two hours, ideally overnight, in a square pan covered with plastic wrap pressed against the surface. That direct contact prevents ice crystals from forming on top.
Pro Tips
- Use real homemade whipped cream if you can. Cool Whip works in a pinch but the flavor is flatter.
- Stir the pudding mix straight from the packet (don’t make it as pudding first). The dry mix dissolves into the dairy and thickens as it freezes.
- Scoop with a hot ice cream scoop dipped in warm water for clean rounded scoops.
Variations
- Fold in chopped Snickers bars or caramel sauce for extra candy bar drama.
- Swap chocolate pudding for butterscotch or vanilla pudding mix for different flavor angles.
- Add a swirl of fudge sauce on top before freezing for a marbled finish.
