Ingredients

3 cups rice cooked
2 cups chicken breast cooked, (slivered)
1/4 pound snow pea pods fresh, trimmed, cut into julienne strips
1 medium cucumber peeled, seeded, and cut into 1 1/2 x 1/4inch strips
1 medium sweet red bell pepper cut into 11/2 x 1/4inch strips
1/2 cup scallions, spring or green onions sliced, (including tops)
2 tablespoons sesame seeds optional, toasted
Sesame dressing
1/4 cup chicken broth
1 tablespoon peanut oil
3 tablespoons white wine vinegar or rice vinegar
3 tablespoons soy sauce
1 teaspoon sesame oil

Directions

Salad: Combine all ingredients; stir well. Serve at room temperature or slightly chilled.

Sesame Dressing: Combine all ingredients in jar; cover tightly and shakevigorously. Makes about 3/4 cup.
