| 6 | medium | trout | |
| 1 | quart | irish ale | |
| 1/2 | pound | button onions | |
| 1/2 | pound | mushrooms, button | |
| 1/2 | pound | carrots | turned |
| 1/2 | pound | butter | |
| 1 | x | flour, all-purpose | |
| 1 | each | bay leaf | |
| 1 | x | thyme | |
| 1 | drop | caramel topping | |
| 1 | x | parsley leaves | chopped |
Place the prepared trout in a buttered pan with the herbs.
Cover with ale and cook gently.
Prepare the onions, mushrooms and carrots and toss separately in butter.
Add some of the cooking liquid to each and simmer until cooked.
Cook peas as usual. When the trout is cooked, drain off the ale, remove the herbs and place on a large dish.
Keep hot. Add to the fish liquid the liquid from the vegetables and reduce the lot by a quarter.
Bind this with a little butter and flour and cook out.
Season and mount liberally with butter.
Color to golden brown with caramel. Pour the sauce over the trout.
Arrange vegetables around. Garnish with parsley.

This is always a hit! I tweaked it by using 1/2 c oil and 3/4 c orange juice and it turned out great. We made these into muffins and put them in gift bags for our out-of-town guests at our wedding and they all loved them. For muffins, we baked at 350 for 25 minutes and it made about 22 muffins per batch.
