55 minA thick, chunky Italian-style soup built on stewed tomatoes, white beans, and broccoli with oregano and rosemary providing the herbal backbone. Parmesan stirred in at the end adds a salty, savory richness that pulls everything together.
This is a pantry-friendly recipe that comes together mostly from canned and frozen ingredients. Stewed tomatoes form the base, canned white beans add protein and body, and frozen chopped broccoli means zero prep beyond opening the bag. The result tastes slow-simmered despite taking under an hour.
Simmering the tomato-spice base for 5 to 10 minutes before adding the beans and broccoli lets the oregano and rosemary bloom in the hot liquid. Adding everything at once dilutes the spice flavor before it has a chance to develop.
Kitchen Tips
- Rinse the canned white beans before adding. This washes off the starchy, slightly tinny canning liquid and gives the soup a cleaner flavor.
- Don’t overcook the broccoli. Five minutes of simmering keeps it bright green with a little bite. Longer and it turns army green and mushy, muddying the soup’s texture.
- Stir the Parmesan in just before serving, not during cooking. Adding cheese to simmering soup can make it stringy and clumpy. Off-heat stirring melts it smoothly.
- Serve with crusty garlic bread to soak up the tomato-y broth at the bottom of the bowl.
Variations
- Add pasta: Stir in cooked small pasta (ditalini or elbow macaroni) for a heartier, almost minestrone-style soup.
- Ham and bean version: Add diced ham along with the beans for a meatier, smokier bowl that’s still quick to assemble.
