| 1 | each | pork roast | rolled, loin |
| 1 | x | salt | pepper and garlic powder, to taste |
| 2 | tablespoons | margarine | |
| 1 | each | onions | up to 2, sauted in margarine, until soft/golden |
| 1 | large | sauerkraut | jar, drained |
| 1 | x | caraway seeds | |
| 1 | x | apple juice | |
| Applesauce and apricot sauce | |||
| 1 | large | applesauce | jar |
| 1 | can | apricot halves, canned | drained |
| 1 | x | nutmeg | to taste |
| 1 | x | cinnamon | to taste |
Sprinkle roast with salt, pepper and garlic powder.
Place in Dutch oven.
Place sauerkraut around roast.
Sprinkle with caraway seeds.
Add onions and butter.
Pour 2-3 inches of apple juice over meat and sauerkraut.
Cook, covered on top of stove over Low heat for 2 1/2-3 hours.
Sauce: Combine sauce ingredients in small saucepan.
Heat over Low heat until hot.
Blend well.

Very clean and fresh tasting and looked amazing. The Greek flavors perfectly matched each other. I added a splash of high quality extra-virgin olive oil just before serving. Even with the light clean taste it turned out to be quite filling with the orzo and chickpeas. The presentation looks great, will definitely be making this for company.
