20 minThe original party dip. A hollowed-out round bread loaf filled with warm, creamy spinach dip, surrounded by torn bread cubes for scooping. Simple, retro, and it disappears from the table every single time.
Two packages of cream cheese get softened in the microwave and mixed with defrosted chopped spinach, chopped water chestnuts for crunch, a squeeze of lemon, and just enough cayenne and nutmeg to keep things interesting. The water chestnuts are the sneaky ingredient here. They stay crisp even mixed into the warm dip, giving each bite a satisfying snap against the creamy filling.
Squeezing the defrosted spinach dry is the one step that matters most. Skip it and you’ll have a watery, thin dip instead of the thick, scoopable spread this is supposed to be. Wring it in a clean towel until nothing drips.
Kitchen Tips
- Leave at least 2 inches of bread on the bottom when hollowing out the loaf. Too thin and the dip seeps through and the bowl collapses mid-party.
- Cube the scooped-out bread and arrange around the bowl for dipping. When that runs out, guests start ripping the bowl itself. That’s the “rip” in the name.
- Soften the cream cheese at 50% microwave power. Full power creates hot spots and can partially cook the cheese, making the dip grainy.
Variations
- Bacon spinach dip: Fold in crumbled cooked bacon and a handful of shredded Parmesan for a richer, smokier version.
- Artichoke addition: Mix in a drained can of chopped artichoke hearts for a classic spinach-artichoke combo.
- Serve with crudites: Set out carrot sticks, celery, and sliced bell peppers alongside the bread for a lighter dipping option.

Directions
Cut 2 inch slice off top of round bread loaf.
Remove centre portion, leaving at least 2 inch of bread on the bottom and 1 inch on the sides.
Cut remaining bread into cubes.
Unwrap spinach; place on plate.
Microwave on High 5 to 8 minutes or until defrosted.
Drain spinach, pressing to remove excess moisture.
In medium bowl, microwave the cream cheese at 50% (medium) or until softened.
Mix in the spinach and remaining ingredients.
Spoon spinach mixture into hollowed out bread loaf.
Serve dip with reserved bread cubes, carrot and celery sticks.
Variation: can add following ingredients Parmesan cheese, cooked crumbled bacon, sliced almonds, chopped hard boiled eggs, shredded carrot or pine nuts.
