We use a muffin pan to bake these potato latkes instead of frying, reducing the oil and still keep them crispy.

Ingredients

907.2g potatoes Yukon Gold
1.0each onion medium size
5.0cloves garlicVideo minced, more or less to taste
237.0ml basilVideo freshly and finely chopped
1.0large eggVideo
1.0large egg whites
118.0ml parmesan, parmigiano-reggiano cheese, grated
30.0ml olive oilVideo
5.0ml salt or more to taste
1.0x black pepper to taste

Directions

Preheat oven to 180 degrees C°F.

Coat a 12-cup muffin pan with cooking spray.

Peel potatoes, grate them through the large holes of a box grater into a large bowl.

Then squeeze grated potatoes in small batches between your hands over the sink to remove excess water.

Grate onion into the same bowl through the same holes.

Stir in garlic, basil, egg and egg white, cheese, oil, salt and pepper to taste.

Place 1/3 cup of the potato mixture into each muffin cup, firmly packing the mixture .

Bake the potato latkes until lightly browned and firm, about 50 minutes.

Cool them in the pan on a wire rack for 10 minutes.

Serve warm.

You can serve these latkes with cranberry pear sauce.

Don't quite know why, but my latkes stuck horribly to the pan. Even after going around each muffin with a sharp thin knife, the bottoms stuck. I followed the recipe exactly, except for using red bliss potatoes, and sprayed the cups. What I did manage to remove tasted wonderful. I did not make the sauce, but rather served with light sour cream.

This is not only thoughtfully-creative (saving calories, while keeping the essential crispiness), latkas done using this method don't lose one single thing in terms of flavour and that comfort-food satisfaction. Let's face it--we make latkas when we want that feeling of home, and being pampered--and these 'latka muffins' are superb!

This is a great recipe, different way to cook potato latkes, after baking they turned out very nice, golden brown on top and firm, we also made the cranberry pear sauce, serve with latkes, they were delicious together.

Boy oh boy, am I ever going to make these this week! I love latkes. Can't wait to see how they turn out for me. Will probably serve with apple sauce and/or sour cream, as that is what I have on hand. Thanks for sharing this one. Photos will be forthcoming.
