Canned fruit cocktail, pineapple chunks, and mandarin oranges get folded into a fluffy mix of pistachio pudding, sour cream, and whipped topping. No baking, no fuss, feeds a crowd of 16.

The real sleeper trick is using the reserved fruit juices to dissolve the instant pudding mix. Most recipes have you use milk. Swapping in the fruit juice amplifies the fruit flavor through the entire salad, and turns the pudding into a tangy, sweet sauce that coats every chunk.

Sour cream is non-negotiable in the classic version. It balances the sweetness of the pudding and canned fruit, adding a tang that keeps the salad from tasting like melted dessert. Whipped topping brings lightness and lift.

Directions

Drain fruit cocktail, pineapple and oranges, reserving 3 cups juice.

Set fruit aside; pour juice into a 4 quart bowl. Add pudding mix and mix until smooth.

Stir in sour cream. Add whipped topping and mix until smooth.

Fold in fruit; chill for several hours.

Top with pecans just before serving, if desired.
