| 2 | tablespoons | onion | chopped |
| 2 | tablespoons | vegetable oil | |
| 2 | each | tomatoes | small, peeled, seeds removed, chopped |
| 1 | cup | nopales | cooked, cut into small strips |
| 1 | teaspoon | cilantro | chopped |
| 6 | large | eggs | well beaten |
| 1 | x | monterey jack cheese | grated |
Saute the chilis and onions in oil until soft.
Add the tomatoes, cactus and cilantro and simmer until moisture is absorbed.
Add the eggs to the mixture and sprinkle cheese on top.
Cover and cook over low heat until eggs are set.
