120 minThis no-bake mud pie is the kind of dessert that looks like you spent hours but takes about 15 minutes of actual work. A buttery chocolate wafer crust gets packed into a pie plate, filled with coffee ice cream, drizzled with fudge, and frozen solid.
The coffee ice cream against that dark chocolate crust is where the magic happens. Bitter, roasted coffee flavor meets crunchy, cocoa-rich cookie, and the fudge topping ties them together with pure chocolate richness.
Soften the ice cream just enough to spread, but don’t let it melt. You want it pliable like soft-serve, not liquid. If it melts and refreezes, you’ll get icy crystals instead of that smooth, scoopable texture.
Whipped cream and toasted almonds go on right before serving for crunch and a cool, creamy contrast.
Pro Tips
- Chill the pie plate after pressing in the crust. A cold crust holds its shape better when you spread the ice cream.

Directions
Combine cookie crumbs and butter in medium bowl, using a fork to cut in butter.
Press firmly over bottom and sides of 9 inch pie plate and chill.
Soften ice cream slightly in a chilled bowl, just enough to spread.
Spoon into chilled crust, smoothing surface.
Freeze until firm.
Drizzle fudge topping over pie and freeze.
To serve: Top with whipped cream and sliced almonds.
