Four-ingredient mini pizzas on party rye with ground beef, hot Italian sausage, and melted Velveeta. Make ahead, freeze, and bake from frozen for easy party snacks.

35 minThese are the ultimate make-ahead party snack. Ground beef, hot Italian sausage, and a full pound of Velveeta get melted together into a meaty, cheesy spread that goes onto slices of party rye bread, then straight into the freezer until you need them.
The genius is in the workflow. You do all the cooking and assembly once, freeze the mini pizzas on sheet pans, then bag them up. They keep for two weeks in the freezer. When guests show up, pull out however many you need and bake them from frozen. Fifteen minutes later you’ve got hot, bubbly appetizers with zero last-minute effort.
Velveeta is the right cheese for this job. It melts smoothly into the meat without separating or getting greasy, and it re-melts cleanly from frozen. A block of cheddar would break and oil out. The hot Italian sausage brings enough spice that you don’t need to add any seasonings.
Kitchen Tips
- Drain the meat well after browning. Excess grease makes the rye bread soggy during freezing and baking.
- Melt the Velveeta on low heat and stir constantly. High heat makes it clumpy and stringy instead of smooth.
- Freeze on sheet pans first, then transfer to bags. This prevents them from sticking together in a single frozen clump.
- Don’t thaw before baking. They go from freezer to oven. Thawing makes the bread soggy.
Variations
- Mild version: Swap hot Italian sausage for sweet Italian or breakfast sausage if you’re serving a crowd with kids.
- Mexican mini pizzas: Use chorizo instead of Italian sausage and add a sprinkle of diced pickled jalapenos before freezing.

Skin the sausage (if necessary).
Brown sausage and hamburger in a large skillet.
Drain fat. Over low heat, add Velveeta until it’s thoroughly melted, and stir thoroughly.
Spread a small spoonful of the mixture on each slice of the Party Rye and place on a cookie sheet.
Freeze for at least 2 hours.
After that, you can remove them from the cookie sheets and put them in a freezer bag for up to 2 weeks! To serve, just place the frozen pizza on a cookie sheet and bake at 350℉ (180℃) for about 15 minutes or until hot.
