This bowl leans hard on rotisserie chicken to pull a weeknight dinner together fast. Buckwheat soba noodles cook in 5 minutes, and the sauce is a quick blender job: fresh jalapeño, honey, cilantro, salt, and pepper thinned with a splash of water until it’s a loose puree.

The noodles get their own dressing of soy sauce, toasted sesame oil, scallions, and minced pickled ginger. That ginger is the unsung hero here, adding a bright, tangy lift that cuts through the honey in the chicken.

Pour the hot honey-jalapeño chicken over the cold-ish noodles so each bite plays warm against cool. Don’t overcook the chicken in the sauce; it just needs to heat through.

Directions

Cook soba noodles according to package directions.

Drain and set aside (or refrigerate until later in the week).

In a blender or food processor, combine jalapenos, honey, cilantro, and ½ teaspoon each salt and black pepper and purée until smooth.

Add 2 to 3 tablespoons of water to the mixture until desired consistency is achieved.

Pour the 2 teaspoons of olive oil into a preheated skillet.

Add the shredded chicken and the blended sauce and cook until heated through.

In a medium bowl, combine cooked soba noodles, soy sauce, sesame oil, scallions, and pickled ginger.

Toss and then transfer to serving bowl.

Pour heated chicken and sauce over noodles.
