| 1 | medium | pineapple | peeled, cored, cut into scant 1 inch chunks |
| 1/4 | cup | pineapple juice | unsweetened |
| 2 | tablespoons | lime juice | |
| 2 | cloves | garlic | minced |
| 1/2 | teaspoon | jalapeno pepper | minced |
| 2 | tablespoons | cilantro | minced |
| 1 | tablespoon | cornstarch | |
| 2 | tablespoons | water | cold |
| 2 | tablespoons | nutrasweet | |
| 1 | x | salt | |
| 1 | x | black pepper | |
| 6 | each | halibut | or haddock or salmon, steaks or fillets, grilled |
Heat pineapple, pineapple juice, lime juice, garlic and jalapeno pepper to boiling in medium saucepan; reduce heat and simmer, uncovered, 5 minutes.
Stir in cilantro; heat to boiling.
Mix cornstarch and cold water; stir into boiling mixture.
Boil, stirring constantly, until thickened.
Remove from heat; cool 2 to 3 minutes.
Stir in nutrasweet; season to taste with salt and pepper.
Serve warm sauce over fish.
NOTE: Pineapple-Cilantro Sauce is also excellent served with pork and lamb.

This recipe was outstanding, easy to make and SO juicy,tender and flavorful! I made it for myself and my husband and he had thirds. We still had plenty left over - warmed with some juice and served on warm onion rolls on day two and cold sandwiches on day three. I will definitely make this again and again. The meat just fell of the bone! chinasmom2000
