Grilled Fish with Pineapple-Cilantro Sauce

Grilled salmon steaks with spicy pineapple sauce is as delightful to look at as it is to eat. What's more, the sauce goes equally well over lots of other fish and meat dishes.

Ingredients

1 medium pineapple peeled, cored, cut into scant 1 inch chunks
1/4 cup pineapple juice unsweetened
2 tablespoons lime juice
2 cloves garlic minced
1/2 teaspoon jalapeno pepper minced
2 tablespoons cilantro minced
1 tablespoon cornstarch
2 tablespoons water cold
2 tablespoons nutrasweet
1 x salt
1 x black pepper
6 each halibut or haddock or salmon, steaks or fillets, grilled

Directions

Heat pineapple, pineapple juice, lime juice, garlic and jalapeno pepper to boiling in medium saucepan; reduce heat and simmer, uncovered, 5 minutes.

Stir in cilantro; heat to boiling.

Mix cornstarch and cold water; stir into boiling mixture.

Boil, stirring constantly, until thickened.

Remove from heat; cool 2 to 3 minutes.

Stir in nutrasweet; season to taste with salt and pepper.

Serve warm sauce over fish.

NOTE: Pineapple-Cilantro Sauce is also excellent served with pork and lamb.

Roasted Sticky Chicken

This recipe was outstanding, easy to make and SO juicy,tender and flavorful! I made it for myself and my husband and he had thirds. We still had plenty left over - warmed with some juice and served on warm onion rolls on day two and cold sandwiches on day three. I will definitely make this again and again.
