Ingredients

3 large tomatoes green
3 large tomatoes red, ripe
1 medium red onion
3 tablespoons basil fresh, coarse chopped
Dressing
1 large garlic clove finely chopped
1/2 teaspoon salt
1/8 teaspoon black pepper freshly ground
2 tablespoons lemon juice
3 tablespoons wine vinegar
1/2 cup olive oil
1/2 teaspoon cumin ground

Directions

*Pick the green tomatoes just before they begin to ripen red.

Cube green and red tomatoes.

Cut onion into thin slices and separate into rings.

Combine tomatoes and onions in a salad bowl with the chopped basil.

Combine the dressing ingredients, mixing well.

Add dressing to salad and toss.

Let set about 30 minutes to blend flavors. Delicious with BBQ!

Multigrain Blueberry and Ginger Muffins

I also made these multigrain muffins, and they were very nice, I love use all kinds of grains, whole wheat flour and cornmeal, they do add the nutty flavor and good for health too. Next time I will sift the flour and baking soda, powder, then after baking the muffins shape should be more evenly.
