| For the fruit: | |||
| 1 | large | honeydew melon | ripe, seeded and cut into 1 1/2-inch chunks |
| 1 | pint | strawberries | hulled and halved |
| 1/4 | cup | lime juice | fresh |
| 2 | tablespoons | sugar | |
| For the yogurt: | |||
| 2 | cups | yogurt, plain | nonfat |
| 1/4 | cup | sugar | |
| 1 | tablespoon | lime zest | freshly grated |
| 1 | tablespoon | lime juice | fresh |
In a large bowl, toss melon, strawberries, lime juice and sugar.
Let stand for 15 minutes, stirring occasionally.
Meanwhile, in a small bowl, combine yogurt, sugar, lime zest and juice, stirring until sugar is dissolved.
Cover and refrigerate until chilled.

These muffins have a pleasant mild pineapple flavor and a good consistency. They are great for a diabetic diet or anyone wanting a sweet treat w/o the added sugar. Much better than bakedgoods made with artificial sweeteners. For variation, I would consider using less pineapple & adding blueberries and/or nuts. I filled 17 regular size aluminum muffin cups.
