60 minThis turkey loaf swaps out the usual beef for ground turkey and uses egg whites instead of whole eggs, making it a genuinely lighter version of the classic without sacrificing moisture. Rolled oats bind the mixture together and absorb juices during baking so nothing dries out.
Chopped red bell pepper, celery, onion, fresh parsley, and basil are mixed right into the meat. The vegetables release moisture as they cook, which keeps the leaner turkey from turning dense and crumbly like so many turkey meatloaf recipes do.
Pat the top dry with a paper towel after it comes out of the oven. Turkey releases more liquid than beef during baking, and that pooled moisture on the surface can make the loaf look and taste waterlogged. A quick blot and it slices clean.
Kitchen Tips
- Don’t overmix the turkey. Overworking ground poultry makes it rubbery. Mix just until everything is combined and stop.
- Egg whites only. They bind without adding extra fat. Let them come to room temp before mixing so they incorporate more evenly.
- Chop the vegetables fine. Large pieces create pockets that can cause the loaf to crumble when sliced. Uniform small dice holds the structure together.
- Check doneness at 40 minutes. Turkey loaf cooks faster than beef. No pink in the center means it’s done. An instant-read thermometer should read 165°F (74°C).
Variations
- Glaze it: Brush the top with a mix of ketchup and a splash of Worcestershire sauce halfway through baking for a sticky, savory crust.
- Italian turkey loaf: Add ½ cup of marinara sauce to the mixture and top with mozzarella during the last 5 minutes.
- Muffin tin loaves: Divide the mixture into a muffin tin for individual portions that cook in about 25 minutes.

Directions
Preheat oven to 350℉ (180℃).
In a medium bowl, combine all ingredients except turkey.
Add turkey and mix well.
Mold turkey mixture into a loaf pan.
Bake 40 to 45 minutes or until no longer pink.
Remove from oven, pat dry with paper towel, and cut into 6 slices.
