The crumb mixture is the workhorse. Brown sugar, flour, and chopped walnuts get pressed into the bottom and pre-baked for a sturdy base, while a reserved handful, tossed with chopped M&M’s, becomes the streusel scattered on top.
The candy does more than decorate. M&M’s layered over the crust and crumbled into the topping melt into little pockets of chocolate and stud the bars with bright color, which is exactly why kids hover around the pan.
The cream cheese filling itself is simple, blended smooth with sugar, vanilla, and an egg so it bakes up dense and silky.

Beat margarine and brown sugar until light and fluffy.
Add flour and walnuts, mix well.
Reserve ½ cup crumb mixture; press remaining crumb mixture into bottom of 8-inch square pan.
Bake at 350℉ (180℃). for 10 mins.
Combine cream cheese, granulated sugar and vanilla, mixing at medium speed on electric mixer until well blended.
Add egg, mix well. Layer ½ cup candy over crust; top with cream cheese mixture.
Combine remaining candy, chopped, and reserved crumb mixture; mix well.
Sprinkle crumb mixture over cream cheese mixture.
Bake at 350℉ (180℃) 20 minutes.
