Classic ground beef meatloaf with Parmesan, oregano, and bread cubes, topped with tomato sauce and melted mozzarella cheese. Old-school diner comfort food that serves 6 hungry people.

This meatloaf hits like a hug from your favorite diner booth.

Ground beef gets mixed with milk-soaked bread cubes, Parmesan cheese, chopped onion, and a touch of oregano for an Italian lean.

It bakes low and slow, then gets smothered in tomato sauce and topped with slices of mozzarella that melt into a bubbly, golden blanket.

Slice it thick and serve it up. This is comfort food that doesn’t try to be anything else.

Kitchen Tips

  • Mix the meat gently with your hands; overworking it makes the loaf dense and tough instead of tender
  • Drain the fat from the pan before adding the tomato sauce so the bottom doesn’t sit in grease
  • Let the meatloaf rest for 10 minutes after baking so it holds together when you slice it
  • Leftover meatloaf makes killer sandwiches the next day, cold or reheated

Directions

Heat oven to 350℉ (180℃).

Combine all ingredients except tomato sauce and Mozzarella cheese.

Mix lightly. In a 10 x 6” loaf pan, shape loaf.

Bake 1½ to 2 hours.

Drain excess fat. Pour tomato sauce over loaf during last ½ hour of baking time.

Place Mozzarella cheese on top. Bake 5 to 10 minutes.
