Ingredients

2 large eggs eaten
1 1/2 cups milk
3/4 cup vegetable shortening melted
2 tablespoons sweet bell pepper chopped
2 tablespoons onion chopped
2 tablespoons pimiento chopped
3/4 cup american cheese grated
3/4 cup cheddar cheese grated
2 1/2 cups flour, all-purpose
1 teaspoon salt
2 tablespoons baking powder
2 tablespoons sugar
2 tablespoons cornmeal

Directions

Mix eggs, milk and shortening.

In another bowl, combine remaining ingredients.

Add milk mixture and stir just to mix (there will be lumps).

Pour into greased muffin cups and bake in preheated 400 degree F. oven 25 to 30 minutes, or until done.
