8 hrsThe genius of this slow-cooker classic is the chemistry between cola and ketchup. As the chicken braises low and slow for 6 to 8 hours, the cola’s caramel syrup and natural acidity break down the meat into fall-apart tenderness while reducing alongside the ketchup into a glossy, sweet-tangy glaze. The flavor lands somewhere between homemade bbq sauce and Coca-Cola pulled pork, but with deeper savory notes from the slowly rendered chicken fat. Sliced onions on top wilt down into the sauce, adding mellow sweetness and aromatic depth. Five ingredients total, counting salt and pepper. The chill-and-skim step is worth the patience. Refrigerating before reheating lets you lift off all the rendered fat in one solid layer for a cleaner, less greasy final dish. Serve over rice, mashed potatoes, or crusty bread to mop up every drop of that glossy red sauce.
Kitchen Tips
- Use regular cola, not diet. The sugars are what create the caramelized glaze, and diet sodas turn bitter under long cooking.
- Place dark meat (thighs, drumsticks) on the bottom and breast meat on top so the white meat does not overcook.
- Cook on LOW for 6 to 8 hours rather than HIGH. The longer cook produces more tender meat and better sauce reduction.
- Skim the fat after refrigerating overnight. The cold firms up the fat into a solid sheet that lifts right off.
Variations
- Use root beer or Dr Pepper in place of cola for a different flavor profile. Both work beautifully with chicken.
- Stir in a tablespoon of yellow mustard and a teaspoon of paprika for a homemade BBQ-style finish.
- Shred the cooked chicken and pile it onto toasted buns as Southern-style sloppy chicken sandwiches.
