Ingredients

Cherry ice cream
300 grams cherries
5/8 cup milk
5/8 cup milk
2 tablespoons kirsch wasser
4 each egg yolks
80 grams sugar granulated
7/8 cup heavy whipping cream
praline
4 tablespoons sugar granulated
4 tablespoons almonds ground
flan
700 grams cherries
50 grams sugar granulated
7/8 cup milk
2 tablespoons flour, all-purpose sifted
100 grams curd cheese
1 1/2 Vanilla beans seeds scraped
2 large eggs
3 tablespoons kirsch wasser
10 grams butter
dust
1 x powdered sugar

Directions

Ice-Cream: Wash and pit the cherries.

Puree in a blender with 5/8 cup milk.

Rub through a sieve.

Bring other 5/8 cup and cream to a boil.

In a bowl combine eggs and sugar. Beat until light and lemon-colored.

Gradually stir in the hot liquid.

Return to saucepan. Beat over low heat until it thickens. Do not boil!

Let cool.

Blend with pureed cherries. Freeze.

Praline: Rinse a stainless steel or marble surface with cold water.

Caramelize sugar in a small saucepan. Add the almonds and stir well.

Turn the praline onto the cold surface and let cool. Chop finely with a knife.

Flan: Preheat oven to 350 degrees F.

Wash and pit the cherries. Transfer to a mixing bowl. Stir in sugar, milk, flour, cream, curd and vanilla seeds.

Beat the eggs and add to mixture. Stir in the kirsch.

Butter small gratin dishes. Fill with the mixture.

Bake for 25 minutes or until golden brown.

Finish: Scoop the ice-cream with two hot tablespoons and place in center of the flan.

Dust with confectioner's sugar and sprinkle with praline.

Rhubarb Cream Pie

This is the recipe I use and have had many, many compliments. I have modified it a bit though. Instead of a top crust I use a crumble topping of ¾ c. flour, ½ c.sugar and ¼ c. marg. Because of the sugar in the topping I reduce the amount in the pie to 1 c.
