This dessert pizza layers three simple components: a homemade sugar cookie crust, a sweetened cream cheese spread, and chilled cherry pie filling spooned over the top. It looks impressive on the table and takes barely any effort to pull together.

The crust is a basic sugar cookie dough rolled to fit a 12-inch pizza pan. Seven minutes in the oven is all it needs to turn golden. Mix the wet and dry ingredients just until moistened and stop. Overworking this dough makes the crust tough and cracker-like instead of tender and slightly chewy.

The cream cheese layer goes on after the crust has cooled completely. Spreading it on a warm cookie would melt the cream cheese into a greasy mess. Leave a half-inch border around the edge uncovered, just like you would with a real pizza. That bare rim gives you a clean edge for slicing and keeps the toppings from sliding off when you pick up a piece.

Chef Tips

  • Chill the cherry pie filling before spooning it over the cream cheese. Cold filling won’t soften the cream cheese layer underneath and holds its shape better for slicing.
  • Use fat-free cream cheese as the recipe calls for. It firms up better than full-fat when chilled, giving you cleaner slices.

Directions

Preheat oven to 350℉ (180℃).

Prepare a 12 inch pizza pan with cooking spray and flour; set aside.

To prepare crust, combine margarine, egg white, milk, and vanilla in a mixing bowl.

In another mixing bowl, combine flour, granulated sugar, and baking powder.

Mix wet ingredients with dry ingredients just until moistened.

On a lighty, floured surface, roll dough into a 12 inch circle.

Press into prepared pizza pan. Bake for 7 minutes or until golden brown.

Cool. Meanwhile, to prepare topping, combine powdered sugar and cream cheese.

Spread over cooled cookie crust to within ½ inch of edge.

Spoon cherry pie filling over cream cheese layer.
