| 1/4 | cup | cottage cheese (low-fat 1%) | |
| 1 | each | carrot | shredded |
| 1/2 | cup | mushrooms | chopped |
| 1/2 | cup | alfalfa sprouts | |
| 1/4 | cup | celery | chopped |
| 1/4 | cup | radishes | chopped |
| 1 | each | scallions, spring or green onions | chopped |
| 1/2 | teaspoon | basil | dried |
| 4 | slices | whole wheat bread | |
| 4 | slices | cheese slices, processed | lowfat |
Combine cottage cheese, carrot, mushrooms, sprouts, celery, radishes, green onion and basil in a medium bowl.
Spoon 1/2 cup cottage cheese mixture onto each toast slice, spreading gently to cover.
Cut each cheese slice into 4 triangles; arrange over cottage cheese mixture.
Broil 4 to 6 inches from heat or until cheese melts.

You're making pastry cream for a banana cream pie for dessert tomorrow. Chilling it overnight should render it appetizingly ...
I had about 1/2 head cauliflower left, then I founf this recipe, there is no dried marjoram in the kithen, so I took dried thyme instead, and followed the directions, and these roasted cauliflower are really yummy, balsamic vinegar definetly added extra yum, great way to cook cauliflower.
