Caramel-Apple Euphoria

Ingredients

2each apples medium cooking
1/2cup apple juice
7ounces caramels candy
1teaspoon vanilla extract
1/8teaspoon cardamom seeds ground
1/2teaspoon cinnamon ground
1/3cup peanut oil creamy
7each angel food cake slices
1quart french vanilla ice cream

Directions

Peel, core, and cut each apple into 18 wedges; set aside.

Combine apple juice, unwrapped caramel candies, vanilla, cardamom and cinnamon, mix with apples.

Put mixture into a crock pot, and dollop peanut butter on top.

Cover and cook on LOW for 5 hours.

Stir thoroughly; cover and cook on LOW 1 additional hour.

Serve approximately 1/3cup of warm mixture over a slice of angel food cake or ice cream.

Sun-dried Tomato, mushrooms and Parmesan Puff Pockets

Yum, these puff pockets are very delicious, I made my own olive-oil sun-dried tomatoes, very tasty, and the pockets turned out golden brown, mushroom, Parmesan cheese and oil sun-dried tomatoes went very well together. Definitely a good recipe once we have company.
