| 1 | cup | rice, brown | |
| 10 | tablespoons | apple juice concentrate | frozen |
| 1 1/2 | cups | milk, skim, evaporated | |
| 2 | large | eggs | |
| 1/2 | teaspoon | cinnamon | |
| 1/2 | cup | raisins, seedless | optional |
| 1 | tablespoon | almonds | slivered, toasted, optional, or more |
| 1 | teaspoon | vanilla extract | optional |
Cook rice as usual, but replace 6 tablespoons of water with 6 tablespoons of the apple juice concentrate.
Beat the remaining ingredients (execpt nuts together in pot.
Mix in rice and cook 8-10 minutes until thick, stirring almost constantly.
Spoon into dishes and chill. Sprinkle with nuts, if desired.
If you like it sweeter drizzle with some maple syrup or sprinkle with a teaspoon of brown sugar.
