| 1 1/4 | cups | black beans | dried, soaked |
| 4 | cups | water | |
| 1 | each | bay leaf | |
| 1/2 | teaspoon | salt | |
| 1 | tablespoon | red wine vinegar | |
| 1 | clove | garlic | minced |
| 1/4 | teaspoon | cumin | |
| 1 | teaspoon | red hot pepper sauce (eg. Tabasco) | |
| 1 | tablespoon | cilantro | chopped |
| 2 | tablespoons | olive oil | |
| 1/2 | each | sweet red bell pepper | diced |
| 1/2 | each | sweet yellow bell peppers | diced |
| 1/2 | each | green bell pepper | diced |
| 1 | each | red onion | diced |
| 4 | each | scallions, spring or green onions | thinly sliced |
Drain beans and rinse well.
Put in a large pot with the water and bay leaf.
Bring to a boil and simmer for 1 to 1 1/2 hours.
Drain.
Combine salt, vinegar, garlic, cumin, hot pepper sauce, cilantro and olive oil in a small bowl.
Pour over warm beans. Toss well. Add remaining ingredients.
Toss gently, garnish with fresh cilantro and serve at room temperature.

Everything you ever wanted to know about hot chili peppers....
Tastier than anticipated. My fiancée was impressed. Good refrigerate & reheat lunch. Better to reheat in oven than microwave to keep the crispiness of the bread.
