Ingredients

1/2 cup vegetable oil olive
2 each garlic cloves minced
1/4 cup scallions, spring or green onions sliced
3 each tomatoes large, peeled and diced
2 tablespoons basil fresh, chopped
1 teaspoon salt
1/4 teaspoon black pepper
1/2 pound pasta, angel hair uncooked
1 x parmesan, parmigiano-reggiano cheese, grated grated
6 each bacon slices, cooked, crumbled or
1 cup ham cooked, chopped or
1 cup chicken cooked, chopped or
1 cup turkey cooked, chopped

Directions

In large skillet, heat oil. Add garlic and green onions, stir-fry for one minute. Stir in tomatoes, basil, salt and pepper; cook 2 minutes, stirring frequently.

Prepare pasta according to package directions; drain. Toss tomato mixture with hot pasta, adding any cooked meats at this time. Serve immediately. Sprinkle with Parmesan cheese.

Chicken a la Nancy

This is one of our favorites. I add more lemon (yes, with the rind!). It's sooo good! Not bitter. I looked online to find it because I misplaced my "Award winning recipes" cookbook in the move. I use vinegar instead of wine (about half the amount) because we don't stock wine.
