The worldwide famous chicken adobo

Fistoff, I would like to apologize to all of my avid readers because I haven’t posted any new recipes in this website for a few months. I have been busy for many things but don’t worry because I am back to give you more free recipes only here at cookingmomstips.wordpress.com.

This time, I will post a famous and known Filipino cuisine – Chicken Adobo. Chicken adobo is a simple dish that mainly consists of garlic, vinegar and soy sauce. The term adobo is also associated with other types of foods like pork adobo, bangus (milk fish) adobo and adobong tilapia (St Peter’s fish).

Below is the more common recipe for chicken adobo.

Ingredients :
1 tbsp vegetable oil
6 sliced chicken (any parts but preferrably thighs)
3 cloves garlic
2/3 cup of apple cider vinegar
1/3 cup of soy sauce
1 tsp black peppercorns
1 bay leaf
Preparation is very simple. Heat oil in medium temperature in a frying pan then pour the chicken until cooked lightly. Make sure that the chicken are all brown before taking it out from the frying pan.

Pour the vinegar, soy sauce, peppercorns and bay leaf into the pan then turn to low heat. After 5 minutes, pour garlic and mix all ingredients until soft. Put the chicken back to the frying pan and covered for 20 minutes.

You may increase the heat to medium-low and extend the cooking time for another 20 minutes until the sauce thickens and the chicken becomes tender and glazed with the sauce. After cooked, place the entire chicken adobo to a serving plate and enjoy your own style chicken adobo!

Side note, any types of adobo are best served with rice.
