Old fashion pot roast -5-6 servings
3 lbs boneless rump roast
1 tbsp. all-purpose flour
1 tsp. salt
1/2 tsp. black pepper
2 tbsp.oil
1 tbsp brown sugar
2 bay leaves, crushed
2 medium onions, sliced
2 medium carrots, sliced
2 stalks celery, sliced
1/2 can beef broth
1/2 cup red wine
1 apple, peeled, sliced
Sauce:
pan juices, about 1 1/2 cups
1/2 cup beef broth
1 tbsp. cornstarch
1/2 cup half and half
prep:
1- combine flour, salt and pepper, dredge pot roast in season flour
2-in large frying pan, brown pot roast in oil on all sides, transfer to a deep casserole or pan with lid
3-sprinkle roast with brown sugar and bay leaves, add onions carrots and celery
4- add beef broth and wine, bring to a boil, cover with lid
5-cook meat in oven at 325F for about 2 1/2 hrs or until meat is tender. check for doneness
6-add apple slices to meat the last 30 min. of cooking time
7- for sauce: strain pan juices and add beef broth in a saucepan
8- mix cornstarch with a little water, bring pan juices and broth to a boil, add cornstarch mixture, cook stirring constantly, until thickened
10-taste and add more seasoning if needed
