Ingredients:
1 Tablespoon butter
1 Tablespoon olive oil
2 cups finely chopped onion
2 cloves garlic, crushed
1/2 cup molasses
1 cup ketchup
1/4 cup red wine vinegar
1 teaspoon dry mustard
1/4 teaspoon freshly ground black pepper
2 Tablespoons lemon juice
1/2 teaspoon grated lemon zest
1 Tablespoon soy sauce
1 Tablespoon paprika
1/3 cup bourbon whiskey

Directions:
In a large, heavy saucepan, melt the butter with the oil. Saute the onions until tender. Add the garlic and cook 2 minutes longer.
Cajun spice mix for the Mahi Mahi
1/3 cup kosher salt
1/4 cup chili powder
1/4 cup Hungarian paprika
1 Tablespoon onion powder
1 Tablespoon coarsely ground black pepper
1 Tablespoon dried basil
1 Tablespoon dried oregano
1 Tablespoon ground coriander
1/2 teaspoon cayenne pepper
2 teaspoons dried thyme
1/4 teaspoon cumin
1/4 teaspoon white pepper
Mix well
Mahi Mahi
Rub Mahi Mahi with the Cajun spice mix
Brush both sides of the mahi mahi fillets with canola oil.
Cook the fish for 2 minutes directly on grill; rotate the fish one-quarter turn without flipping it.
(This gives the fish an attractive diamond pattern from the grill.) Cook for 5 minutes longer on the same side.
Flip fish and cook for 5 minutes longer. Fish is done when it feels firm to the touch.
6 shrimp for each Mahi Mahi steak
Season shrimp also with spice mix and grill 1 to 2 min each side. Best when you put shrimp on a kebob stick.
When Mahi Mahi and shrimp are done pour the Bourbon sauce over it and serve with mashed potatoes.
