Bubba Gump Garlic Mashed Potatoes

¼ lb. roasted garlic
4 Pounds russet potatoes (peel on, washed 1-inch pieces)
¼ tbsp. salt
½ cup Parmesan cheese, processed
1 ½ oz. butter, whole
½ tbsp. salt
½ tsp. white pepper
½ cups cream

To roast whole peeled garlic cloves
Place 2-3 lbs. of garlic in a half hotel pan, add a quarter of an inch of
water to the plan, and cover with foil. Bake in a 350-degree oven for 1
hour. The garlic should be quite tender (not mushy), light brown, when done.
Boil potatoes in salted water until tender. When potatoes are almost done
simmer cream for 1-2 minutes. Add potatoes, garlic, cheese, butter, salt and
pepper in a bowl and whip them with an electric mixer. While continuing to
mix, add part of the cream at a time, stopping to check the consistency as
you go.

2 cups cold mashed potatoes
2 eggs, lightly beaten
1 tablespoon all-purpose flour
1/8 teaspoon garlic powder
1 tablespoon vegetable oil
1 tablespoon chopped fresh chives
Directions
1Combine potatoes, eggs, flour, and garlic powder in a bowl.
2Heat oil in a skillet over medium-high heat; fry potato mixture in skillet, pressing with a spatula to flatten evenly.
Cover and cook until bottom is crispy, about 10 minutes; invert onto serving platter.
