Ginger ale jello salad , 7 up strawberry pie, & up salad

Ginger Ale Jello salad

•1 envelope unflavored gelatin
•1/4 cup cold water
•1/4 cup fresh orange juice
•2 Tbsp fresh lemon juice
•2 Tbsp sugar
•1/4 tsp salt
•1 cup ginger ale
•1 cup diced fresh or canned fruit, any combination
•2 Tbsp crystallized ginger (optional)
•6 lettuce leaves

Soften gelatin in cold water in a large heat-proof bowl, set over boiling water and stir until gelatin dissolves. Mix in orange juice, lemon juice, sugar and salt. Cool to room temperature, add ginger ale and then chill until the consistency of unbeaten egg white, about 30 minutes. Fold in fruit and ginger, then divide among 6 individual molds and chill several hours, or until set, about 3 hours. Unmold on lettuce and serve.

SPRITE SALAD

1 pkg. strawberry Jello
1 sm. can crushed pineapple
1 sm. (3 oz.) cream cheese, softened
1 c. boiling water
1 c. Sprite
1 sm. Cool Whip
1 c. chopped pecans

Dissolve Jello in water.

Add cream cheese, pineapple juice, and Sprite.

Mix and refrigerate until thick.

Add pineapple, nuts, and Cool Whip, and beat together.

Refrigerate until serving time.

7-UP STRAWBERRY PIe

1 pt. fresh strawberries
1 baked pie crust
1 carton whipped topping or Reddi Whip
1 (10 oz.) bottle 7-Up
1 c. sugar
3 tbsp. cornstarch
1 1/2 tsp. red food color
Mix sugar and cornstarch in large saucepan. Add 7-Up and cook over medium heat for about 20 minutes or until thickens and assumes a syrup like appearance, next add food color. Place strawberries in baked pie crust. Pour syrup over strawberries and refrigerate. After syrup has completely jelled, top pie with whipped topping.

Strawberry Margarita Mousse

This wiggly, jiggly, creamy dessert is like a fruity fiesta in your face. And even if you ate half of the bowl of mousse (a HUGE portion!), you'd still take in fewer calories than if you ordered ONE frozen strawberry margarita at a bar. Sweet!

Ingredients:
1 large (8-serving) package JELL-O Sugar Free Strawberry Gelatin Dessert Mix
2 cups frozen unsweetened strawberries, mostly thawed
1 1/2 cups Cool Whip Free, thawed
1 cup cold Sprite Zero (or any diet lemon-lime soda)
1/4 cup plus 1 tbsp. (2 1/2 oz.) tequila
3 tbsp. lime juice

Directions:
In a medium-large bowl, combine gelatin mix with 1 cup boiling water, and stir until completely dissolved, about 2 minutes. Set aside.

In a blender, combine strawberries, soda, tequila, and lime juice. Puree until smooth. Add this mixture to the bowl with the gelatin mixture and stir thoroughly. Refrigerate for 45 minutes, until slightly thickened but not set. (Do not over-refrigerate.)

Using an electric mixer, blend in the Cool Whip. Once mixture appears mostly blended, use a spoon to mix it up from the bottom. If needed, continue mixing until uniform. Refrigerate for at least 2 hours, until mostly firm. Enjoy!
