My grandmother used to make a crisp (like apple crisp) it had a shortbread on the bottom and the squash in the middle with oats on top.I am looking for the recipe that tastes exactly like apples but is really summer squash or zucchini squash. The squash is peeled and seeded and cut into slices, simmered in lemon juice. I don't know the rest of the recipe. Is there anyone who can help me find this recipe?

Summer Squash with Apples and Walnuts
This takes advantage of the happy coincidence that diced squash and apples cook in about the same time. The entire dish can be made in 12 minutes, more or less.
Any summer squash such as zucchini, straight neck, crooked neck,pattypan, cocozelle,
1 ounce, 1/4 cup, diced Fuji apple,
1 ounce, 1/4 cup, or any cooking apple, diced
Walnuts, a few
Sauté pan, without cover
Dice squash. Dice apple, after peeling and removing the core.
Toast the walnuts in the toaster oven.
Place squash and apples in the pan. Moisten with a tablespoon of water. Simmer uncovered until apples and squash are tender, about 10 minutes.
Remove pan from heat and serve, or set aside until needed.
