Special chinese sauce from restaurants

Hi, can anybody know how to make the special soy sauce? I buy roast duck or char siu (chinese roast pork) takeout from those meat places in Chinatown, you know, where there's grease and steam everywhere, a dingy restaurant in the back, old chinese guys chopping with huge cleavers, and huge slabs of meat hanging on metal hooks in the windows. They come with these little cups of sauce, that's dark and tastes great. You can get extra ones for a quarter or something. Does anyone know how they make those sauces? I think its soy sauce with other stuff added, but I'm not sure.

It's the same sauce they pour over your plate when you go to a chinese restaurant and you order char-siu with rice.

Can anybody help me, does anybody have friend that works in one of those places?

i rekon its hoi sin sauce
you can buy it anywhere so many different brand names but same result
